Greek Potato Salad


This potato salad is so simple, yet so flavorful! The dill and lemon flavors pairs perfectly with tender potatoes and a touch of mayo for a unique twist on the normal potato salad. Your neighborhood BBQ just got a little tastier.

Prep Time:  10 minutes  - Cook Time:  15 minutes - Total Time:  25 minutes
Yield: Serves 6

2 lb Red Potatoes, large dice
1 Tbsp Dill Olive Oil
1/4 cup Mayo
2 Tbsp Cucumber Balsamic Vinegar or Roasted Garlic Vinegar
1 tsp Greek Tzatziki Seasoning
1 1/2 tsp Citrus Dill Sea Salt
1/4 cup Scallions


  1. In a large stock pot, cover diced potatoes with cold water. 
  2. Bring to boil and cook potatoes until fork tender, about 10-12 minutes once boiling. Drain.
  3. In a large bowl, combine potatoes, olive oil, mayo, balsamic, tzatziki, and sea salt.
  4. Top with scallions and serve. Enjoy!
